• Question: there is a new method in making a beef burger, they make them in a lab using stem cells and muscle from a cow ? and is really expensive! will this be sucsessfull in the future do you think? and how exacly are they made, as i only know the bare basics (:

At the moment, engineered meat, or ‘in-vitrio’ meat is expensive because the technology is still being developed and there are still concerns over if it is safe or environmentally friendly.

There are two ways of making artificial meat, both using stem cells. The first just grows loose muscle cells that can be knitted together to make a sort of processed burger – more like a beef burger. The second way makes whole muscles grow as if they would if they were in a cow, with blood vessels and fat around them to make them the right shape – this is more like an artificial steak.

The artificial meat is a good idea because you don’t need to clear big areas of land for cow ranches (most of why the Amazon is being cleared), but some people are worried about how environmentally friendly the ‘meat factories’ will be, or if the meat will be safe to eat. I think though, that as the world’s population increases, it will be used more and more to feed poorer people.

Stem cells are pretty amazing things. They are showing lots of promise in lots of different areas, it’s an exciting area of science.

We’re getting really good at making tissues from scratch. I think it’s an interesting area – loads of people eat tofu or other kind of meat substitutes, so there may well be a market for it.

I doubt it’ll taste as nice as a proper aberdeen angus burger though!

Stem cells are quite interesting. We have quite a few in our body, and some of them can turn into any other kind of cell. I think the artifical beef was grown by persuading bovine (cow!) stem cells to turn into muscle and they grew around in an artificial support (like a dish) but that could become a bone in the future.

As a vegetarian, it is an interesting problem for me: if no animal was involved, except for getting the initial stem cells (which might they not even notice have been taken) then is it okay to eat? I think I would, but I might not like the taste!

It’s funny because 10 years ago my friends and I used to joke about “cow in a vat” at lunch time (yes we were all scientists – this was while I was doing my PhD). I forget why we talked about this so much – but now it’s starting to happen which is really interesting. I’ve no idea of the details either though!
